Anchovy and Smoked, Roasted Vegetables Bites

Ingredients

1 Aubergine
1 Onion
1 Red Pepper
1 Italian Pepper
2 Anchovies

Directions

Roast the aubergine, onion, peppers and tomato.

Remove them from the tray as soon as they are cooked.

Form in the shape of a pyramid, starting with the aubergine, then adding the Italian and red peppers, the onion and the cherry tomato. On top of the tomato place the anchovies and finish by piercing with a skewer so that it does not collapse.
